Many of us work hard to reduce food waste by only buying, cooking, or taking what we know we will be able to eat. But have you ever wondered what happens to the food at the dining halls or restaurants that is not put on your plate? Here at UNH, Rochelle L'Italien and her team at UNH dining have been looking at ideas to further improve UNH's sustainability initiatives by repurposing surplus food.
